Specialty coffee has a high moisture content, and we believe that unless you choose the optimal roasting machine, you won't be able to bring out its exceptional flavor. It's said that 70% of delicious specialty coffee depends on roasting technique. At Mel Coffee Roasters, we use a refurbished and customized 1968 Probat L5 roaster and a 1960 UG15 roaster. Just as the temperature and humidity change with the seasons, so do the conditions of our green beans and roaster. This roaster and our technology allow us to consistently derive the optimal roast profile for each season. We are constantly evolving our roasting techniques until our coffee reaches you, striving to deliver the most memorable and delicious specialty coffee possible.

The "Mel" in Mel Coffee Roasters is a reference to Melbourne, Australia. Enjoy a richly customized Melbourne-style coffee. They roast coffee in a compact shop on a street corner. While they focus on light roasts, they also offer a wide range of medium and dark roasts.

[Farm Information]
This ORG-certified agricultural cooperative was established in 2017 in the Sierra Nevada, a region in northern Colombia where the indigenous Aruacan culture is deeply rooted. Despite its traditional roots, the cooperative's activities are highly forward-thinking, providing opportunities for seminars and training trips to continually raise producer awareness and improve quality. Many of the producers are women, and they are dedicated to cultivating and managing their crops, rather than relying on their families. While the Sierra Nevada is one of the most biodiverse regions in the world, it currently faces issues such as illegal mining, poaching, and environmental pollution. To protect this precious natural environment through coffee cultivation, the cooperative also prioritizes agroforestry and ecotourism.
