The owner, who was originally unable to drink coffee, has created a coffee roasting shop with the concept of making coffee that is easy to drink and brew. Since 2017, he has been using a Dutch-made Giessen roaster and interacting with various roasters. He is inspired by them every day and improves his roasting skills.

[Roaster Information]
Opened in Yamatokoriyama City, Nara Prefecture in 2014. In 2017, they introduced a Dutch-made Giessen roaster and focused on creating profiles that combine accumulated data with their own sensibilities. They specialize in a wide range of roasts, from light to dark.

[Farm Information]
Um Coffee was founded by Boram Um, the current Brazilian three-time world barista champion, who will be competing in the global competition in 2023. The Korean family's coffee history began in 2007 when father Stefano Um decided to buy a farm in Sur de Minas, Campania, to produce specialty coffee.
This lot is a Yellow Bourbon made from coffee cherries, called boia, which are dried on the tree until they become like raisins.
