[Roaster Information]
KARIOMONS COFFEE ROASTER's theme is "An experience that goes beyond a cup of coffee." They source most of the coffee beans they handle through direct trade, with some farms they've had relationships with for over 10 years. They place importance not just on the coffee in the cup, but also on conveying the story behind it and creating an experience. They use a 12kg German-made Probat roaster that has been customized to allow for more detailed analysis of the roast profile.
[Farm Information]
The farm owner, Sergio, is truly a pioneer. He is an avant-garde producer who is always at the forefront of various production methods that are now common in many coffee-producing countries. He approaches coffee production logically like a scientist, and actively incorporates new ideas into his farm through repeated experiments.
In addition, he and his wife, Kenya, are recognized for their technical skills in the world of cupping, which evaluates the flavor of coffee, and have ample experience as judges at coffee competitions. With their rich imagination and ability to execute, they are producers who are always at the forefront of quality.
This time, we will introduce a test batch that combines two processes, Pulped Natural and Natural, which was born from a casual conversation during a cupping session on site.
